If you are like me and love, love, love to nibble on sweet treats, try my healthy vegan chocolate almond fudge. It’s super simple and quick to prepare and the ingredients are fantastic beauty and brain boosters. Nosh yourself smart and sexy!
Fun facts: almonds are a rich source of antioxidants and skin nourishing vitamin E. They also provide our brain and body with healthy fats and powerful plant proteins. Coconut oil supplys our brain and body with quick energy and its fatty acids nourish and moisturize our skin from the inside out #yay! Cocoa powder is choc full of minerals like iron, manganese, magnesium and zinc, which support healthy blood cells and bones. It also contains flavonoids like epicatechin and catechin. Never mind breaking your tongue on those, the important thing to know here is that they fight inflammation in our bodies and therefore keep us healthy and happy!
Prep time 5 minutes – Freeze for 1 hour
Line a square pan (I used an 8 inch size) with parchment.
If necessary, warm the coconut oil until it is liquid. Add all ingredients into a food processor and blend them until the mixture is smooth.
Pour the fudge mixture into the pan, cover it with foil and freeze for one hour to set. Pull the fudge out of the pan using the parchment paper, sprinkle it with some coarse salt, cut into pieces and devour! Refrigerate or freeze leftovers (ya, good luck with that, I never have any ;)).
