Bet You Beg for More Broccoli Salad

Most of us know about the amazing health benefits of eating broccoli. Hello strong bones, hiya heart health, aloha anti-aging,  just to name a few! Some of us though, me included, have a more “meh” type of relationship with the cruciferous vegetable. But things change dramatically when I mix it up. Broccoli loves to party! Add some other vegetables, nuts, dried fruit and slather it in a creamy dressing, voilà: Broccoli bliss!

Serves 8 – Prep time 15 minutes

Dressing Ingredients:

  • 3-4 tablespoons veganaise
  • 2 tablespoons maple syrup
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 2 finely chopped garlic cloves
  • Himalayan rock salt and pepper to taste

Salad Ingredients:

  • 3 large broccoli crowns (florets only), chopped
  • 2 cups cherry tomatoes, halved
  • 1/2 cup roasted almonds, chopped
  • 1/2 small red onion, diced
  • 1/2 cup dried cranberries

Add dressing ingredients in a big bowl and stir until well mixed.

Add broccoli, tomatoes, almonds, red onion, and cranberries into the bowl with the dressing and toss until coated thoroughly. Season with salt and pepper.
